Heat the olive oil in a large pot and gently saut\u00e9 the vegetables together with the pressed garlic clove until they take on a light color.<\/p>\n<p data-start=\"199\" data-end=\"392\">Add the tomato paste and briefly roast it. Deglaze with balsamic vinegar and mix well. Then pour in the vegetable broth (or water) and let the jus simmer gently over low heat for about 2 hours.<\/p>\n<p data-start=\"394\" data-end=\"487\">After about 1 hour, add the rosemary sprigs and the bay leaf so the aromas can fully develop.<\/p>\n<p data-start=\"489\" data-end=\"680\">Remove the herbs and strain the jus through a fine sieve. If needed, mix the rice flour with a little water until smooth and stir it into the liquid, whisking until the jus slightly thickens.<\/p>\n<p data-start=\"682\" data-end=\"808\" data-is-last-node=\"\" data-is-only-node=\"\">Season with tamari, salt and freshly ground pepper.
