Entre otras cosas, ya fue responsable de la concepci\u00f3n y apertura del restaurante Nikkei Nine en el Hotel Vier Jahreszeiten (premiado con 15 puntos Gault Millau) y sigue los pasos de nuestro veterano jefe de cocina Hubert Hohler, que ahora trabajar\u00e1 para Buchinger Wilhelmi como experto en gastronom\u00eda.<\/p>\n<p>Philipp Troppenhagen combina muchos a\u00f1os de experiencia profesional en puestos de direcci\u00f3n en la gastronom\u00eda de alto nivel con una formaci\u00f3n como nutricionista. Una de las motivaciones que gu\u00edan su trabajo es fusionar el aspecto del disfrute con una dieta saludable sin carne.<\/p>\n<p>Seg\u00fan sus propias palabras: \u201cLa experiencia me ha demostrado que una dieta saludable solo funciona si se disfruta con ella. Espero poder transmitir esta experiencia placentera a los pacientes de Buchinger Wilhelmi. Aqu\u00ed podr\u00e9 desarrollar plenamente mi creatividad en la concepci\u00f3n y preparaci\u00f3n de experiencias gustativas saludables y vegetarianas\u201d.<\/p>\n<p>&nbsp;<\/p>\n<h3>Chef de alta cocina<\/h3>\n<p>Ya durante su periodo de aprendizaje, Phillipp Troppenhagen se sinti\u00f3 atra\u00eddo por la haute cuisine. Se form\u00f3 como cocinero en el Hotel Louis C. Jacob (Hamburgo), cuya cocina fue distingida en aquel momento con una estrella Michelin. Despu\u00e9s trabaj\u00f3 como chef de partie y sous chef en restaurantes Gault Millau y Michelin de Alemania y Suiza. Entre sus empleadores figuraron, entre otros, el restaurante Tafelhaus de Hamburgo y el hotel Vier Jahreszeiten. En Suiza trabaj\u00f3 en los restaurantes Bam Bou de Lucerna y Widder de Z\u00fcrich. Viajes de formaci\u00f3n culinarios le llevaron a Extremo Oriente, Marruecos Zanz\u00edbar y como chef de partie a Australia. Tras completar su formaci\u00f3n en la escuela de cocina Alain Ducasse de Par\u00eds, Philipp Troppenhagen se incorpor\u00f3 al hotel Vier Jahreszeiten de Hamburgo. Despu\u00e9s de desempe\u00f1ar el cargo de chef de cuisine en el restaurante \u201cDoc Cheng\u2019s\u201d (elegido mejor restaurante extranjero, 15 puntos Gault Millau), fue nombrado chef ejecutivo de la cocina del hotel Vier Jahreszeiten. A partir de 2019, este cocinero nacido en Hamburgo centr\u00f3 su atenci\u00f3n en el desarrollo de conceptos en diferentes restaurantes alemanes y franceses a la vez que cursaba la carrera de nutricionista.<\/p>\n<p>&nbsp;<\/p>\n<h3>Comer, una vivencia para nuestros hu\u00e9spedes<\/h3>\n<p>El nuevo chef reforzar\u00e1 a\u00fan m\u00e1s la vivencia del ayuno de nuestros hu\u00e9spedes y pacientes con experiencias culinarias creativas. \u201cBuchinger Wilhelmi es un lugar especial donde las personas pasan un periodo de tiempo extraordinariamente intenso.
