Une fois le m\u00e9lange refroidi, incorporez l\u2019huile d\u2019amande (8 ml) et mixez soigneusement jusqu\u2019\u00e0 obtenir une \u00e9mulsion homog\u00e8ne. Turbinez en sorbeti\u00e8re. \u00c0 d\u00e9faut, versez dans un plat peu profond et faites prendre au cong\u00e9lateur en remuant r\u00e9guli\u00e8rement pour \u00e9viter la formation de cristaux.<\/p>\n<p data-start=\"539\" data-end=\"960\">Pour le crumble, r\u00e9duisez le sarrasin en farine (ou utilisez de la farine d\u00e9j\u00e0 moulue). P\u00e9trissez avec l\u2019huile d\u2019amande (12 ml), le sucre (8 g), une pinc\u00e9e de sel et un peu de vanille pour obtenir une p\u00e2te. \u00c9talez-la sur une plaque recouverte de papier cuisson et faites cuire \u00e0 165 \u00b0C pendant environ 15 minutes, jusqu\u2019\u00e0 ce que le crumble soit bien dor\u00e9 et croustillant. Laissez refroidir puis \u00e9miettez en gros morceaux.<\/p>\n<p data-start=\"962\" data-end=\"1274\" data-is-last-node=\"\" data-is-only-node=\"\">D\u00e9noyautez les prunes, coupez-les en quartiers et portez-les \u00e0 \u00e9bullition dans une petite casserole avec le jus de prune ou de pomme jusqu\u2019\u00e0 ce qu\u2019elles soient tendres. \u00c9gouttez-les, liez l\u00e9g\u00e8rement le sirop obtenu avec la farine de caroube, puis versez de nouveau le sirop li\u00e9 sur les prunes.
